There is a reason potatoes are such a popular food item. They are inexpensive, versatile, and go with just about anything. With so many ways to prepare them, I often include potatoes as a side dish with my dinners, and this recipe is my favorite. It is easy to prepare and full of flavor. Sloppy joes for dinner? This recipe is perfect. Pork Roast? Same. Turkey burgers? You get the idea!
Although they often get a bad rap, potatoes can be quite healthy. This dietitian has no problem serving potatoes multiple nights each week. Rich in potassium and fiber while naturally low in fat and sodium, I am simply careful of the way I season, cook, and serve potatoes to keep them on the healthy side. Using small amounts of oil combined with low-fat cooking methods (like baking) will keep the fat content low, while using plenty of flavorful herbs and seasonings will avoid the need for other less-healthy flavor additions, like sour cream or bacon.
You may be wondering, where is the salt? As a dietitian, I rarely cook with salt, and I almost never add salt to my food. This recipe includes such a wonderful variety of seasonings, that I believe it is delicious as is. Before assuming that potatoes NEED salt added to them, I would encourage you to try the food first. While salt does taste good, so do potatoes!
Personally, I prefer to use a variety of different potatoes to keep this dish colorful and visually appealing. Conveniently, the stores where I do my grocery shopping have bags of petite potatoes that already contain a mixture of purple, golden, and red varieties. However, any type of potato will work for this recipe, including large Idaho or Russet potatoes. I also leave the skin on the potatoes for added color, in addition to boosting the health benefits of the dish.
Simply Seasoned Roasted Potato Recipe
Ingredients
- 24 ounces Petite Potatoes (variety of colors)
- 2 Tablespoons Canola or Vegetable oil
- 1 teaspoon Garlic Powder
- 1 teaspoon dried Parsley
- 1/4 teaspoon Paprika
- 1/8 teaspoon dried Rosemary
- 1/8 teaspoon dried Thyme
- 1/8 teaspoon dried Basil
- Black pepper to taste
Directions
- Preheat oven to 425 degrees Fahrenheit
- Wash and dry the potatoes, then cut into bite-size pieces, about 1″
- Spread the potatoes evenly on a sheet pan, drizzle with oil, then toss to coat
- Sprinkle the dry ingredients over the potatoes (garlic powder, parsley, paprika, rosemary, thyme, basil, and black pepper) and toss to coat
- Bake in the preheated oven for 35-45 minutes, or until the potatoes are golden-brown
Time Saving Tip: Follow directions #2 through #4 a few hours ahead of time, then cover with plastic wrap and store in the refrigerator for up to 12 hours. When ready to bake, simply uncover and bake in a preheated oven.
