Easy Slow Cooker Beef Recipe

Taking only 10-15 minutes to prepare in the morning, this simple slow cooker beef recipe simmers in a savory broth all day, for a fast and delicious dinner in the evening.

This is one of my easiest weeknight dinner recipes for the slow cooker. It takes only a few minutes to put together, can cook all day without burning, and is ready to eat with minimal additional effort or time when I walk in the door. I often make this slow cooker beef recipe on days where a full work day is followed by some type of game, practice, meeting, etc., keeping my family away from home for many hours. It’s also a good choice for those nights we are all eating dinner at different times, with everyone using the beef to make their own sandwich.

In addition to the above benefits, this recipe is incredibly versatile, with minimal effort to change up the flavors of your sandwich. Using a variety of cheeses, like Swiss, provolone, or cheddar, will alter the taste, as well as using a variety of toppings and condiments, like lettuce, tomato, onion, horseradish, ketchup, etc. Even the bread can make a difference. Although the rest of my family prefers a softer bread, like a hoagie bun, I prefer a crusty whole-grain french bread. I then serve myself a small dish of the broth and dip each bite of my sandwich in the broth before eating. Yummy!

Although you can use most cuts of beef for this, I prefer to use an eye of round beef roast and slice it myself. Why? An eye of round roast is a somewhat leaner beef roast to keep this dish lower in fat, especially when the excess fat on the outside is hand trimmed prior to cooking. In addition to the lower fat content, the eye of round slices hold their shape fairly well, rather than falling apart in the slow cooker. It just makes it a little easier to scoop out the slices of meat for a sandwich.

Since the beef is cooked in quite a bit of liquid, it won’t burn despite being left in a slow cooker for many hours. I have left this recipe cook for 13-14 hours before, and it still tastes amazing! This is definitely a dinner for those long days away from home. However, it works just as well to cook for less time. If you’re not a morning person, this can be prepped the night before by slicing the beef, placing it in the crock along with the seasonings and liquids, and stored covered in the refrigerator. In the morning, simply place the entire pot in the slow cooker and turn it on.

Slow Cooker Beef Recipe

Ingredients

  • Eye of Round Roast, trimmed of excess fat, about 2 pounds
  • 1 can condensed french onion soup, 10.5 ounces
  • 1 can reduced sodium, fat free beef broth, 14 ounces
  • 1/2 teaspoon garlic powder
  • black pepper to taste

Directions

  1. Slice the beef into 1/4-1/2 inch portions, and layer in the bottom of the slow cooker pot
  2. Sprinkle the garlic powder and black pepper on top of the beef
  3. Pour the soup and broth on top
  4. Cover and let cook for 5-6 hours on low

Time-Saving Tip: Add one pound of washed, peeled, raw baby carrots to the slow cooker prior to adding the other ingredients. These will cook along with the beef for a fast and colorful side dish to your meal!
