Brussels sprouts have a bad name. Most people I know won’t even try them, let alone think to add them as a side dish to dinner. Brussels sprouts have a reputation of being bitter and smelly, but I am convinced that is because they are usually overcooked. Admittedly I am guilty of overcooking Brussels sprouts myself. It was my belief that they should be served tender, as if they are simply a smaller version of cabbage. WRONG! In my personal experience, Brussels sprouts served crispy and crunchy (and perhaps even a touch burnt!) are a healthy and delectable side dish!

Why should this simple roasted Brussels sprouts recipe be added to your side dish rotation? Brussels sprouts are a cruciferous vegetable. Along with other cruciferous vegetables like broccoli, cauliflower, cabbage and kale, this group of healthy veggies are rich in phytochemicals. Brussels sprouts also contain plenty vitamins and minerals, like Vitamin C, Vitamin K, folate, and magnesium. Lastly, Brussels sprouts are high in fiber, with about 3 grams of fiber per cup.

In addition to the health benefits, Brussels sprouts make a great side dish that adds color to the plate. The vegetable adds a nice green color to your dinner to compliment the beiges and browns in most main dishes. They also add a crunchy component, which is a nice addition to a meal that may not otherwise have a variety of textures.

Simple Roasted Brussels Sprouts Recipe

Ingredients

  • 1 pound of raw Brussels Sprouts, washed
  • 2 Tablespoons olive oil
  • 1 Tablespoon garlic powder
  • fresh ground black pepper to taste (about 1/2 Tablespoon)

Directions

  1. Preheat oven to 450o F
  2. Cut the ends off of the Brussels sprouts, and cut each sprout in half (or very large sprouts into quarters) and spread evenly on a baking sheet.
  3. Drizzle the olive oil over the Brussels sprouts, then sprinkle the garlic powder and pepper over top.
  4. Toss the Brussels sprouts to coat, then spread out evenly on the baking sheet.
  5. Bake in the oven at 450o F for 45-50 minutes

Time Saving Tip: Buy pre-washed, halved Brussels sprouts and avoid the chopping
