There’s nothing quite as comforting and warming on a cold day as a good pot of soup. However, it can be a burden to make sometimes. Who wants to wash and chop all those vegetables? Not me! And besides, I’ve always struggled to get the seasoning in my soups “just right.” Most of the time, they seem to be missing something. That’s what makes this easy turkey vegetable soup recipe so wonderful. Not only is there no need to wash or chop anything, but the seasoning is taken care of!

While I would encourage you to experiment with different brands and seasonings on your meat, I have always used the Honeysuckle White brand turkey breast tenderloins, usually the rotisserie and homestyle flavors. Both make a fabulous soup full of flavor! I do try to get ALL the marinade out of the package and into the slow cooker, or at least as much as I possibly can. It adds such a richness to the broth and really makes this easy turkey vegetable soup recipe delectable! It’s also the reason no additional seasoning is needed, making this a true “dump” recipe.

While this easy turkey vegetable soup recipe is delicious as is, there is an easy way to really make it savory. Rather than using a full 48 ounces of chicken broth, you can reduce this amount to 32 ounces and add a can (14.5 ounces) of reduced-sodium beef broth. Yes, I realize this sounds very strange. I had the same thought but tried it anyways. WOW! It really does make this soup much richer in flavor and more savory. I encourage you to try it!

To serve this easy turkey vegetable soup, nothing else needs to be added. It is a complete meal by itself. However, it goes wonderfully with just a few saltine crackers or a hunk of good crusty bread. To make it a little more “fancy” serve the soup in a bread bowl. Of course, this also goes well with some added noodles.

Easy Turkey Vegetable Soup Recipe

Prep Time: 5 minutes Cook Time: 6-8 hours Additional Prep time: 5 minutes

Ingredients

  • 1 seasoned Turkey Breast Tenderloin (24 ounces), thawed
  • 2 bags frozen Vegetable Soup Mix (12 ounces each)
  • 48 ounces reduced-sodium Chicken Broth

Directions

  1. Put the turkey breast tenderloin in the bottom of the slow cooker, including as much of the marinade/seasoning as possible
  2. Dump the vegetables over top, then pour the broth over the vegetables
  3. Cover and cook on low for 6-8 hours
  4. After the turkey is fully cooked, remove the turkey breast from the soup and place onto a cutting board or plate. Shred the meat, then return it to the slow cooker and stir.
  5. Serve and enjoy!
