Why does my family like this easy shrimp scampi recipe? First and foremost, it’s delicious! But second, it is incredibly easy to make and takes about 30 minutes, making this a wonderful choice for a homemade dinner on busy weeknights. I also like to include some type of seafood dish into my dinner rotation at least once a week, and this recipe is a simple and budget-friendly way to do that.

Shrimp is definitely one of my favorite kinds of seafood. Why? I love the firm texture and, of course, the buttery taste. It’s also a way to incorporate seafood into meals without the “fishy” smell or taste. Shrimp is a great source of protein, with about 18 grams per serving of cooked shrimp. It’s also naturally low in fat, with only about 1 gram of total fat per serving. Furthermore, shrimp is a budget-friendly seafood, costing much less than most fish or shellfish.

You may notice that this easy shrimp scampi recipe contains A LOT of garlic. Why? Because both myself and my family LOVE garlic. I’ve never encountered a dish with too much garlic! Of course, that’s one great thing about cooking at home; you can customize the recipe however you see fit. If your family are fellow garlic-lovers like mine, go ahead and stick to the recipe. If you’d rather not taste garlic for the next several days, though, consider cutting the garlic in this recipe in half.

You’re also probably thinking about omitting the spicy brown mustard in this easy shrimp scampi recipe, but don’t do it! I tried to make shrimp scampi for years, but it was always missing something. Finally, I came across a recipe that called for spicy brown mustard, so I decided to try it. As my husband exclaimed when he tasted the first bite, nailed it! The brown mustard really does add just a slight spicy and tangy flavor to cut through all the butter and oil. With only 1 teaspoon in the entire dish, trust me, it won’t taste like mustard.

Another question; where’s the salt? As a dietitian, I rarely use salt in my cooking, and this easy shrimp scampi recipe is no exception. There is so much flavor from not only the shrimp, but the garlic, mustard and spices that I simply do not see the need for salt to be added. While you can certainly add salt to your own recipe at home, I would very much encourage you to try this dish without first. You may be surprised how good it tastes!

Finally, what to pair with this rich and delightful shrimp scampi? Of course, the obvious answer is pasta. Angel hair pasta is my favorite, but any pasta will be fantastic. My family likes to use the excess sauce to pour over our pasta. Sprinkle a little parmesan cheese on top for an extra-rich dinner. And don’t forget a vegetable! A fresh salad or any type of green vegetable, like asparagus or broccoli, makes a healthy and colorful side dish. Of course, there’s no reason this MUST be paired with pasta. It tastes wonderful on its own. For a lower fat content, simply remove the shrimp from the finished dish, leaving as much sauce behind as possible.

Easy Shrimp Scampi Recipe

Prep Time: 5-10 minutes Cook Time: 15-20 minutes

Ingredients

  • 1 pound raw Shrimp, peeled and deveined
  • 2 Tablespoons Butter, melted
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Lemon Juice
  • 1 Tablespoon Minced Garlic
  • 1 Tablespoon Dry White Wine
  • 1 teaspoon Spicy Brown Mustard
  • 1 teaspoon Dried Parsley
  • 1/8 teaspoon Dried Oregano
  • 1/8 teaspoon Dried Basil
  • Black Pepper to taste (about 1/8 teaspoon)

Directions

  1. In a 9 x 13 baking dish, add all ingredients except for the Shrimp. Stir gently until well combined
  2. Add the shrimp, and toss to coat. Spread the shrimp out evenly in a thin layer in the dish.
  3. Bake, uncovered, in a preheated oven at 400oF for 15-20 minutes or until the shrimp are pink and opaque

Time-Saving Tip: Follow the first 2 steps ahead of time, and store, covered, in the refrigerator for up to 24 hours. Then, simply bake when ready.
