Why do I love salmon? First and foremost, it’s delicious! Of course, the health benefits are great, as well. Rich in protein and omega-3 fatty acids, salmon is an excellent addition to the recommended 1-2 servings of seafood each week for most adults.

This easy baked fish recipe is simple, quick, and healthy. Although fresh salmon is wonderful, where I live fresh seafood is difficult and expensive to obtain. I almost always use frozen fish and simply let it thaw completely prior to baking. The result is still a tender, flaky and rich dinner.

While I realize using real butter isn’t considered the healthiest addition to one’s diet, it does add a richness to the flavor that simply can’t be matched using healthier options. With only three tablespoons of butter to the five servings per recipe, the amount of added fat is small, less than one tablespoon per serving. However, to make this an even healthier dish with less saturated fat, one could substitute olive oil in place of the butter.

While this easy baked fish recipe by itself is not low-fat, it can be made a part of a well-balanced, low-fat dinner by adding some strategic side dishes. Personally, I like to pair the salmon with some roasted potatoes and Brussels sprouts, or asparagus and mashed potatoes. With some forethought, this could even be made into a one-pan dinner!

Garlic Butter Salmon Recipe

1 whole boneless salmon fillet, skin-on (about 1.25 pounds)
3 Tablespoons butter, melted
1 Tablespoon minced garlic
1 Tablespoon dried parsley
1 Tablespoon lemon juice
freshly ground black pepper

Directions

  1. Place salmon on a greased baking sheet, skin side down
  2. Slowly pour the melted butter over the fish, using a basting brush if necessary to spread evenly
  3. Use a spoon to spread the garlic over the salmon
  4. Sprinkle the fish with parsley and black pepper, then gently drip the lemon juice over the entire fillet
  5. Bake in a pre-heated oven at 400 degrees Fahrenheit for 22-25 minutes, or until cooked through
